Qualifications:
– Ability to communicate in English orally and in writing is required;
– Completion of secondary (high) school graduation is required;
– 3 years to less than 5 years of commercial cooking experience including preparing multi-course Kaiseki cuisine in an upscale Japanese restaurant is required.

Job Duties:
– Prepare and cook food on a regular basis;
– Plan, organize and direct the preparation and cooking of multi-course Japanese and Kaiseki cuisine;
– Prepare and cook a variety of Japanese specialty dishes, including Wagyu, sushi, sashimi, grilled dishes, tempura and rice cooked in a traditional copper Hagama pot;
– Prepare Japanese stocks, soups and sauces, including dashi made with Hokkaido kombu and Kagoshima dried bonito, and ensure proper seasoning, flavour, texture and presentation;
– Prepare and cook seasonal dishes using high-quality Japanese and Canadian ingredients, applying traditional Japanese cooking techniques;
– Prepare dishes for customers with food allergies or intolerances;
– Develop and refine seasonal recipes and menu items in accordance with Kaiseki and Kappo culinary principles and the restaurant’s standards;
– Train staff in preparation, cooking and handling of food;
– Supervise and coordinate the activities of cooks and other kitchen staff and instruct them on food preparation, cooking, garnishing and presentation techniques;
– Monitor the quality, consistency and presentation of dishes during service and ensure that food is prepared and handled in accordance with food safety and sanitation standards; and
– Estimate food requirements and requisition food, ingredients and kitchen supplies as required.
