Qualifications:
– Ability to communicate in English orally and in writing is required
– Completion of Secondary (high) school is required
– 3 years to less than 5 years of work experience as a cook or a chef in a restaurant including two years in a supervisory capacity is required
– Work experience in a traditional high-end Japanese restaurant and/or knowledge of Authentic Japanese Sushi is an asset
Job duties:
– Supervise cooks and other kitchen staff;
– Prepare and present Edomae-zushi and sashimi;
– Prepare customized sushi menus using the daily fresh fish;
– Train new staff in preparation, cooking and handling of food including preparation of fish and seafood for sashimi and sushi as well as side dishes;
– Maintain inventory, records of food, supplies, equipment and order them when necessary;
– Estimate food requirements and food and labour costs;
– Requisition food and kitchen supplies;
– Recruit and hire staff;
– Arrange for equipment purchases and repairs if necessary;
– Plan menus and ensure food meets quality standards
